The Zibibbo 'Suòlo 5' from the important Sicilian winery Duca di Salaparuta represents a dry interpretation of the island's most important aromatic grape variety, capable of being appreciated for its savoury and fragrant character. The 'Suòlo' project was launched in 2020 with the aim of enhancing the bond between man and the land, between the vineyards of Duca di Salaparuta's various estates and the soils that make up Sicily. In particular, the Zibibbo destined for this label comes from the fertile hills of the Risignolo Estate, located in the Salemi area on the western side of the island.
The Zibibbo Duca di Salaparuta 'Suòlo 5' comes exclusively from Zibibibbo grapes, synonymous with Moscato di Alessandria, cultivated on limestone-clay soils at an altitude of 300 metres above sea level. Harvesting is carried out by hand in the early hours of the morning and is followed by destemming of the bunches. The grapes then undergo a brief cold skin maceration before being softly pressed, with the must thus obtained then undergoing alcoholic fermentation in stainless steel tanks. Also in stainless steel, on the fine lees, the wine matures for 6 months before final bottling.
Duca di Salaparuta's 'Suòlo 5' Zibibbo has a straw yellow hue with greenish flashes. Intense aromatic sensations of orange blossom, lily of the valley, tropical fruit and citrus peel tell the story of the nose together with hints of Mediterranean scrub. The taste is dry, savoury and fresh, with excellent softness and a fine aromatic persistence on the finish. Thanks to its territoriality, this Zibibibbo pairs beautifully with Sicilian seafood cuisine, particularly with dishes such as sarde a beccafico or anchovy meatballs.
