Jak Dario Princic 2021
Artisanal
Callmewine's FavouritesThe Jak by Dario Princic is a white wine macerated on the skins obtained from Friulano grapes from 60-year-old vineyards and aged for 30 months in large barrels. On the nose, there are hints of medicinal herbs, hay, citrus, candied fruit, and ginger. Fresh and savory on the palate, with an unusual delicate tannin and a long finish
The Jak intrigues as soon as it is poured into the glass with its beautiful intense orange hue. Complex and surprising nose, it ranges from notes of ripe peach to sweetness reminiscent of cooked fruit and cinnamon. Then the spices, such as ginger and cardamom. Curious and unusual, it is however on the palate that the liquid completely reveals its immense personality, masterful combination of substance and freshness, which still maintains a noble and elegant bearing. The tannin, a result of the maceration, is perfectly integrated and functional in pairing, enhancing shellfish in sauce or ethnic dishes, such as chicken curry. Author wine.
