Artisanal"Versante Nord" by Eduardo Torres Acosta is a white wine resulting from a deeply territorial blend of indigenous grape varieties from Etna, sourced from 6 different plots located on the northern slope of the volcano, from which this label takes its name. A skin maceration that exudes minerality and infinite complexity, typical traits of the volcanic terroir of origin. It is rich, powerful, and gently tannic on the palate with a young and bold spirit, just like the winemaker who nurtured it in the vineyard and cared for it in cement and barrels.
The White Northern Slope by Torres Acosta is a multifaceted and deep white that excites with its richness of suggestions. Eduardo Torres Acosta is, without fear of contradiction, one of the most promising young talents in the world of artisanal wine, and his first releases have already enamored numerous enthusiasts. At 33 years old and of Spanish origin, Eduardo, after his experience with Arianna Occhipinti and at Passopisciaro as a winemaker, decided to rent 2 hectares of vineyard on the northern slope of Etna, hence the recurring name on the labels. Nerello Mascalese and Cappuccio, Carricante, Minnella, Catarratto, and Grecanico grow in maximum harmony with the surrounding environment, without resorting to any chemical or synthetic substances. The skin maceration of this extraordinary white enriches the profile of the liquid without altering it. A squeeze of volcano, salt, and fruit.
The White Northern Slope is made from a typical Sicilian blend consisting of Minella, Catarratto, Carricante, Coda di Volpe, Grecanico, and Inzolia. The vines are between 45 and 50 years old, located at 650 meters of altitude on loose soils formed from volcanic ash.altitude on loose soils formed by volcanic ash. The grape harvest is carried out strictly by hand, with careful selection of the bunches. In the winery, as in the vineyard, the process continues without forcing or intervention, and after spontaneous fermentation that takes place in cement tanks without temperature control, the liquid remains 5 days in contact with its skins. The Bianco Versante Nord has an intriguing intense yellow color, which shifts towards orange. Enchanting nose, made of multiple and varied suggestions ranging from lemon to orange blossom, from hay to chamomile, in addition to bursts of flint. If the nose is already intriguing in itself, the palate is a true masterpiece, initially driven by a citrus freshness and capable of expanding, taking possession of the palate thanks to a full and satisfying texture.
