The white wine "Casamatta" is made starting from a trio of white grape varieties, Trebbiano, Moscato, and Vermentino, where the latter leads the largest percentage of the blend assembled in the final phase. The grapes are carefully harvested during manual harvesting operations and are immediately transferred to the premises where vinification begins. After destemming, the berries are sent to the pressing phase, and the must obtained from this process then ferments spontaneously, thanks to the presence of indigenous yeasts, in stainless steel containers. The final aging lasts for a few months and is made of steel.
