Lallement Massonot's Champagne Brut 'Zeste Floresien' comes from grapes harvested from Premier Cru near iReims. This is a sparkling wine of remarkable finesse, a predominantly Chardonnay blend. The Maison champenoise Lallement-Massonot presents the Champagne Premier Cru Brut 'Zeste Floresien', a predominantly Chardonnay cuvée characterised by refined floral hints. In managing his vineyards, Xavier Lallement, the fifth generation of winemakers in the Lallement-Massonot household, pays particular attention to the health of the soil and plants, with the aim of fostering the natural resistance of the ecosystem-vineyard. With this in mind, he adopts practices such as grassing the inter-rows and planting trees to encourage biodiversity, as well as measures such as limiting soil tillage.
The 'Zeste Floresien' Lallement-Massonot Champagne Brut Premier Cru is made from a blend of Chardonnay (50%), Pinot Meunier (25%) and Pinot Noir (25%) grapes grown in the Montagne de Reims area. The vineyards, classified as Premier Cru, are planted on clay and sandy soils and have been conducted for over 30 years without the use of insecticides. In the cellar, the hand-picked bunches of grapes are vinified separately through soft pressing and subsequent alcoholic fermentation in stainless steel tanks. Once the sparkling wine base has been prepared, it is bottled with the addition of the liqueur de tirage for re-fermentation in the bottle according to the Champenoise Method, associated with more than 36 months on the lees. Final degorgement is followed by Brut dosage with the addition of a liqueur d'expedition prepared by the Maison itself through a combination of wine and cane sugar.
The Champagne 'Zeste Floresien' Brut Premier Cru from Lallement-Massonot is an intense straw yellow colour with subtle effervescence. Clear floral hints present the nose, accompanied by notes of lemon peel and mineral hints of flint. In the mouth, it is balanced and very fresh, with a pleasant mineral persistence to define the taste closure.
