Champagne Cuvée 748 Extra Brut is the perfect introduction to the world of Jacquesson, a world of breadth, class and complexity. The '7xx' cuvée line began in 2000 with number '728', numbered consecutively to all the cuvées produced by Jacquesson since the first one recorded: number 1, made by the winery back in 1898 to celebrate its first century of life. In general, although it is a sans année, this line aims to celebrate the essence of each individual vintage that, year after year, forms the basis of the cuvée, usually combined with a percentage of around 30% vin de reserve.
The Cuvée 748 Jacquesson Champagne Extra Brut is a blend of Pinot Noir, Pinot Meunier and Chardonnay. Specifically, the Pinot Noir and Pinot Meunier come from the villages of Ay, Dizy, Hautvillers and Champillon and account for 75% of the blend, with the remaining 25% made up of Chardonnay Grand Cru from Avize and Oiry. The vines are cultivated using a highly sustainable agronomic approach, while in the cellar, vinification takes place in wooden barrels of various sizes, with maturation on fine lees. The vintage wine is then blended with approximately 30% of vin de reserve from the two previous harvests, before undergoing secondary fermentation in the bottle according to the Champenoise method. Ageing on the lees lasts for about 3-4 years and the sparkling wine is finally dosed as Extra Brut. No filtration or clarification operations are carried out during the entire process.
Jacquesson's Extra Brut Cuvée 748 Champagne is bright golden yellow in colour with a very fine and lively perlage. The aromas evoke notes of candied citrus and dried fruit that meet mineral tones of granite and chalk. The palate reveals an excellent balance between softness, freshness and savouriness, all supported by significant body and structure. It finishes with a long persistence on sweet and mineral accents.
