The Chardonnay "Cardellino" is a classic by Elena Walch: a soft, intense, and quite complex white wine, matured on fine lees in steel and, in small part, in barriques. It has aromas of ripe yellow fruit, honey, and sweet spices. The taste is round, enveloping, fresh, mineral, and persistent.
The Chardonnay “Cardellino” is a balanced wine that is immediately understandable thanks to a focused and precise personality. The nose is a complex play of layered aromas, where it is easy to have different inputs, from fruity to spicy, while on the palate freshness and minerality are the protagonists of a refined and long sip. A bottle that is one of the great classics presented by Elena Walch and certifies the skill of the winery in handling the starting grapes in purity, enhancing its salient and most peculiar aspects. Versatile in the kitchen, it pairs well with both fish-based dishes and white meats.
This “Cardellino” Chardonnay comes from the winery's own vineyards located in a hilly position, about 400 meters above sea level. The grapes are gently pressed and the obtained must undergoes static decantation. The subsequent fermentation takes place at controlled temperature both in steel and, for 15% of the total mass, in barrique. This “duplication” is also maintained in the following maturation phase, in which the rests for a total of 5 months.
