Cour-Cheverny 'Chataigniers' Hervé Villemade 2022
Hervé Villemade's Cour-Cheverny 'Chataigniers' is made exclusively from Romorantin grapes. This grape variety is native to Touraine, an area located on the left bank of the Loire, where it adapts perfectly to the sandy, silica-rich soils. Only a few hectares are dedicated to the cultivation of this variety, which is mainly linked to the Cour-Cheverny appellation. The nose is complex with hints of fruit and white flowers, evolving into vegetal notes of cut grass and balsamic touches, with an acacia honey finish. On the palate, it is taut, with marked freshness and a persistent savouriness on the finish. It pairs perfectly with pan-fried prawns or salmon tartare
