The Metodo Classico Sparkling Wine ‘Blanc de Blancs’ Brut Nature by Elios, an artisanal producer, is a lively and fragrant interpretation of Catarratto, one of Sicily’s most important white grape varieties. Elios’ venture into sparkling wine production began in 2020 with the acquisition of a high-altitude vineyard located on Monte Bonifato, at 650 meters above sea level, surrounded by pine and oak forests. This elevation lies south of the town of Alcamo, in the province of Trapani, on a plateau overlooking the Gulf of Castellammare, characterized by a cool and breezy microclimate.

The ‘Blanc de Blancs’ Brut Nature Elios Metodo Classico is made from 100% Catarratto, cultivated following organic and biodynamic farming principles on calcareous marl soils at an altitude of 650 meters. The harvest is carried out by hand between late August and early September, followed by gentle pressing. The resulting must undergoes spontaneous alcoholic fermentation in stainless steel tanks, driven by indigenous yeasts. The base wine is then bottled with the addition of tirage syrup for secondary fermentation in the bottle, according to the Metodo Classico, followed by at least 18–20 months of aging on the lees before disgorging and the absence of dosage, making it a Brut Nature.

The Elios Metodo Classico Sparkling Wine ‘Blanc de Blancs’ Brut Nature has a straw-yellow color with fine and persistent bubbles. The nose reveals hints of aromatic herbs like rosemary and sage, followed by citrus notes and delicate toasted almond nuances. On the palate, it is fresh and harmonious, with delicate effervescence enhancing the savory finish.
