Didier Grappe's winery stands out as a small gem in the Jura wine scene, enchanting with the unconventional style of its wines. Founded in 2001 by winemaker Didier Grappe, who began cultivating the first vines after graduating from the Beaune wine school, the Domaine is located in the village of Saint-Lothain, within the Côtes du Jura appellation. Didier is a calm and introspective vigneron, deeply passionate and capable of letting his wines speak for him.

Didier Grappe lovingly tends to his estate, which covers just 3.8 hectares, all managed under certified organic practices using only copper, sulfur, and fermented plant extracts. This approach aims to achieve low yields per hectare to both elevate quality and maintain plant health. As a testament to the true sustainability with which Didier approaches his role as a winemaker, his vineyards are teeming with rabbits, bird nests, and numerous insect species. On soils composed of red marls, grey marls, and limestone, he cultivates the grape varieties Savagnin, Chardonnay, Pinot Noir, Trousseau, Poulsard, Seyve Villard, and Leon Millot, with the latter representing two rare genetic hybrids created through the crossing of other hybrid grape varieties. The vigneron believes in a completely non-interventionist winemaking approach, based on spontaneous fermentations and the total exclusion of additives throughout the production process, as well as clarification, filtration, and sulfite additions. For wine aging, he uses either stainless steel tanks or small wooden barrels, often left partially empty to encourage the development of flor yeast on the wine's surface in the sous voile style. Others are aged in constantly full containers, following the ouille style.

Didier Grappe's labels have an original and direct personality, very fresh and vibrant, produced in very limited and sought-after quantities. Despite the limited production, the crafted labels are diverse, each possessing its own unique identity.
