Ribolla Gialla 'Opoka' Marjan Simcic 2021
The Ribolla Gialla "Opoka" by Marjan Simcic is an intense wine made from grapes sourced from vines over 60 years old and aged for over 20 months in wood. Complex on the nose, distinctly iodized and mineral, with cut grass and white pepper. On the palate, it reveals itself to be balanced, fresh, and persistent.
The Ribolla Gialla "Opoka" wine enchants as soon as poured into the glass with its intense golden hue edged with slight orange reflections. The nose is stunning in intensity, profoundly deep, alternating mineral bursts with toasted notes, and has a progression that stands out for its finesse and cohesion. The sip is tasty and filling, yet always reactive as it is supported by a structure made of salt and freshness. A nectar of great class, an example of how spontaneity and elegance can coexist. A must!
premise for the selection of grapes that takes place strictly by hand and with spontaneous fermentations carried out in contact with the skins for about 6 days in truncated-conical oak vats without the addition of selected yeasts. No filtration or clarification for what is a true manifesto of terroir. Before bottling, the liquid ages for 8 months in 4000-liter oak barrels and for 11 months in 500-liter oak barrels.
