The important Sicilian winery Cantine Fina presents the Vendemmia Tardiva Dolce Naturale 'El Aziz', a pure Grillo in a passito version capable of seducing with its Mediterranean sweetness. The name 'El Aziz' derives from the Arabic term of the same name meaning "The Magnificent", underlining the sumptuousness of this passito wine, produced for the first time with the 2003 vintage as a consequence of one of the hottest summer periods in recent decades.
The Dolce Naturale Cantine Fina Vendemmia Tardiva 'El Aziz' is a 100% Grillo from vines cultivated in western Sicily at an altitude of around 200 metres above sea level. Harvesting is carried out strictly by hand at a late stage, approximately in the first ten days of October, after leaving the bunches to dry on the vine. In the winery, the vinification process involves the soft pressing of the highly sugary grapes, followed by the alcoholic fermentation of the must in stainless steel tanks. The subsequent maturation phase also takes place in steel, containers in which the wine remains for approximately 6 months until final bottling.
On visual examination, the Grillo Vendemmia Tardiva Dolce Naturale 'El Aziz' of Cantine Fina presents itself with an intense straw-yellow hue and golden hues. The nose offers inviting and sweet sensations of very ripe and dehydrated fruit, including pineapple, peach and apricot, aromas that combine with notes of candied fruit, vanilla, honey and sweet spices. The taste is soft and enveloping, endowed with great structure and harmony, with the persuasive sweetness and warm embrace of the alcohols accompanying the savoury and slightly bitter finish. The producer's own suggestion is to pair this passito wine with blue cheeses such as gorgonzola, or with various creamy and delicate desserts.
