The Sicilian estate Bosco Falconeria presents Catarratto 'Falco Peregrino,' a macerated white wine of remarkable structure and complexity that expresses the more assertive character of this native grape variety and for this reason defined by the winery itself as "white for winter." Bosco Falconeria is very attentive to preserving biodiversity and in fact, in addition to following the sustainable practices provided by organic farming for over 30 years, it is involved in raising numerous other plant species in addition to the vine.
Bosco Falconeria's Catarratto 'Falco Peregrino' is a 100% Catarratto from vines raised in the espalier and alcamese alberello systems on red, medium-textured limestone soils located 250 meters above sea level. Agronomic management is based on organic farming and, in addition, the winery applies what is known as "agriculture by subtraction," aimed at drastically reducing phytosanitary treatments. Once the berries have reached the ideal degree of ripeness, we proceed with the harvest and the subsequent mashing of the grapes in stainless steel tanks, where spontaneous alcoholic fermentation takes place at a controlled temperature associated with a few days of maceration on the skins. The subsequent elevation phase also takes place in stainless steel and lasts for 9 months, at the end of which the wine is bottled without any addition of sulfur.
The color of Catarratto Bosco Falconeria 'Falco Peregrino' is golden yellow with brilliant reflections. Rich and broad is the olfactory mosaic, composed of aromas of ripe citrus, herbs, macerated flowers, honey and dried fruit that blend with a mineral undertone. Firm and vibrant palate, with good freshness and marked savory timbre, with a pleasant tannic sensation accompanying the lingering, slightly almondy finish.
