The Dolcetto d'Alba "Coste and Fossati" Vajra is a historical wine for this company in the town of Barolo; is an historical wine because, as explained Francesca Vajra, talk about the Dolcetto Coste and Fossati means telling the entrance "at the tip feet"of the Vajra family in the wine world. A perfect balance between past generations and youthful curiosity, passion for taste and observation of how the vine grows and develops. Drinking the "Coste and Fossati" means to enter into the reality of Dolcetto, a vine sometimes mistreated, and try to transmit their true nature.
This Dolcetto d'Alba is born from the passion of Aldo Vaira then that he decided, against the current, to keep old logs in fine Dolcetto Coste and Fossati vineyards that, historically, are dedicated to the production of Barolo. And this is the choice that is the basis of a Dolcetto of great quality, with a precise and careful selection leading to a wine with incredible elegance and concentration. We are in the vineyards of Coste Vergne and Fossati, in the territory of Barolo, at an altitude ranging between 400 and 480 meters above sea level, the vineyards are exposed South-West in Coste and South-East in Fossati.
And here borns the Dolcetto of Vajra, after a fermentation which lasts 20-25 days and after 8-12 months of aging in the cellar. We are in front of a Dolcetto from the color purple, alluring scents of black cherry, licorice and menthol. A Dolcetto elegant, balanced, complex, supple tannins and pleasant and the amazing ability of aging.
