Satèn Millesimato “Donna Cora” is a Franciacorta wine produced in the vineyards of Tenuta Montenisa, a historic estate in the Franciacorta region, which became part of the numerous properties managed by the Antinori family some twenty years ago. The Chardonnay grapes come from the most suitable plots of the estate in Cazzago San Martino. The sunny hillside exposure, the suitable soils and the mild, breezy climate allow for the harvest of ripe, perfectly healthy grapes. The grapes are pressed very gently in order to extract only the free-run juice. Fermentation takes place in stainless steel tanks and French oak barriques. After several months of ageing, the base wines are blended to create the cuvée. The second fermentation takes place in the bottle according to the principles of the Metodo Classico, with a sur lattes period of at least 60 months.
Tenuta Montenisa's Metodo Classico "Donna Cora" is a particularly prestigious Franciacorta Satèn. In the glass, it is light yellow in colour, intense and brilliant, with a luminous, very fine and persistent perlage. The nose reveals a refined bouquet, with floral aromas of hawthorn, orange blossom, pear, green apple and white peach, hints of bread crust, petits fours and brioche. On the palate, it is complex and enveloping, with a soft and creamy mouthfeel, broad and mature aromas, perfectly balanced by a finish characterised by a pleasant savouriness and a lively mineral freshness. It is a particularly complex and persistent Satèn, suitable for pairing with seafood first courses, baked fish or white meats.
