The Grappa di Nebbiolo Riserva aged in Porto barrels is one of the most interesting products made by Sibona. The distillery has recently introduced for some of its Grappe a technique borrowed from the world of Whisky, that of double aging. In practice, the Grappa, at the end of the production process, is aged first in normal oak wood, and then in barrels that contained a sweet wine. In this case, barrels that held Porto are chosen, which help to impart the pleasant fruity notes that are felt on the finish, also contributing to making the olfactory profile of this label even more complete.
This Grappa di Nebbiolo Riserva aged in Porto barrels is made by the Sibona distillery from fresh Nebbiolo pomace, which, once harvested, arrives on the same day at the distillation facilities, so that they are still full of aromas and aromatic sensations. Here they are processed using copper stills, and every single process of production is monitored with the utmost care. At the end of of distillation, the obtained Grappa is first rested for two years in oak barrels and then, for another two years, in barrels previously used for the aging of vintage Porto.
The Grappa di Nebbiolo Riserva aged in Porto barrels presents itself in the glass with a golden yellow color, with slight amber reflections. The nose resonates with notes of toasted wood and balsamic sensations, alternating with hints of wood and hazelnuts. On the palate, it is full-bodied, subtle, and refined, with a finish characterized by a particularly fruity aftertaste. A distillate with which Sibona confirms its excellent quality levels, perfect for accompanying post-dinner conversations with friends.
