Possente's Grillo is produced in Salaparuta, inland Sicily, on limestone soils that give great finesse to the wine. Vinification involves cryomaceration and ageing on the lees for three months in steel. The nose is dominated by notes of pink grapefruit, yellow apple and white flowers. In the mouth it is fresh, savoury, with a well-balanced taste and a pleasantly bitter finish. Ideal with fish dishes, grilled vegetables or a simple herb couscous
