Vignoble Des 2 Lunes' 'Cecile' is a pure Riesling made on the limestone marl soils of southern Alsace. The ‘Cecile’ Riesling from Domaine Vignoble des 2 Lunes is an interpretation of Riesling with an elegantly mineral style, resulting from a genuine agronomic and enological approach. This label is a tribute to Cécile Buecher, one of the two Buecher sisters who have passionately led the family’s Domaine since 2009, with the family being involved in winemaking for seven generations. In crafting this Riesling, Cécile opted for a semi-dry version, characterized by a well-perceived but not dominant residual sugar.
Vignoble des 2 Lunes Riesling ‘Cecile’ is made from pure Riesling grapes grown according to certified organic and biodynamic practices. Once the grapes reach full maturity, manual harvesting is conducted, accompanied by careful selection of the clusters. In the winery, the vinification process begins with the gentle pressing of the grapes, followed by spontaneous alcoholic fermentation of the must in stainless steel tanks, utilizing only the native yeasts present on the grapes and in the winemaking environment. The wine then matures for 12 months in oak barrels, gaining complexity and refining its flavor, and after further resting in the bottle, it is finally ready for the market.
