The grapes are harvested when very ripe and fermented by indigenous yeasts in steel tanks; the wine is left to age for a long period in the bottle. BARBERA 'SETTE ZOLLE' I CARPINI 2021 DESCRIPTION

 

I Carpini 'Sette Zolle' Barbera constitutes a pure expression of this popular black grape variety, produced in the Tortonese Hills according to a holistic viticultural approach that frames the vineyard as a piece of a more complex ecosystem, within which each element coexists in symbiosis and harmony. 'Sette Zolle' was the first wine thought up by Paolo Ghislandi, a winemaker who, together with his wife Maddalena, runs I Carpini. The grapes come from the first vineyard planted by the couple in the late 1990s, whose name pays homage to Vittorio, Paolo's father.

Barbera 'Sette Zolle' from the artisanal winery I Carpini consists of only Barbera grapes grown according to the principles of holistic organic farming. The vineyard is located between 380 and 400 meters above sea level, and once ripe, the grapes are harvested entirely by hand and carefully selected. Alcoholic fermentation takes place in stainless steel tanks thanks to the sole presence of indigenous yeasts, accompanied by 15 days of maceration on the skins. Once the fermentation process is complete, the mass remains to mature on the fine lees in stainless steel for 18 months and, once the racking operation has been carried out, spends an additional year, again in stainless steel. After another two years of bottle ageing, the wine is ready for release.

Barbera dei Colli Tortonesi 'Sette Zolle' I Carpini is ruby red in colour with purplish highlights. Heady fruity scents of cherry and black cherry jam emerge from the glass, accompanied by aromas of sweet spices such as cocoa and balsamic hints. In the mouth, it reveals good structure and a round body, well balanced by a vivid freshness that makes the sip surprisingly smooth. The finish insists on savoury and balsamic sensations.
