Piccini's Bianco 'Histrio' unites two iconic aromatic grape varieties, Vermentino and Malvasia, with the history of wine through amphora ageing. After vinification, the wine rests for 7 weeks in clay amphorae and macerates briefly on the skins. This passage gives body and great aromaticity: spices and white flowers intertwine with intense hints of tropical fruit. Produced from a blend of Vermentino and Malvasia, Piccini's 'Histrio' reflects the intensely aromatic character of the original grape varieties. The 'Histrio' selection offered by the Piccini family includes a Bianco and a Rosso made from traditional grapes processed with a short passage in terracotta amphorae. This is the oldest material used in winemaking, already used 8,000 years ago in the Caucasus region, corresponding to the present-day borders of Georgia and Armenia. Here, the European vine species we know would have originated, spreading over centuries and millennia towards the West.
Piccini 'Histrio' originates from a blend of Vermentino (70%) and Malvasia (30%) grapes grown under certified organic cultivation. When the berries have reached the desired stage of ripeness, the grapes are harvested, followed by white vinification of the bunches through soft pressing and alcoholic fermentation of the must in stainless steel tanks. Once the fermentation process is complete, the mass is transferred into terracotta amphorae, containers in which it remains to mature for a few months before final bottling, which precedes a further brief rest in glass.
The White Piccini 'Histrio' has an intense and brilliant straw yellow colour. The nose offers aromatic hints of summer fruit and white flowers such as jasmine and chamomile, enhanced by light hints of passion fruit and iodised mineral tones. On the palate it is fresh and savoury, almost earthy, with a dynamic and slender progression that rests on a gentle mineral finish. By virtue of its suave character, this Tuscan white wine is an excellent accompaniment to various fish, shellfish or mollusc dishes.
