Charles Dufour's Extra Brut 'Bulles de Comptoir #13 - Cuisine de Dimanche' Champagne is a label created in a small family-run Maison located in the Côte des Bar, the southernmost area of the Champagne region. It is a cuvée based mainly on Pinot Noir, complemented by Chardonnay and Pinot Blanc, which expresses good structure and great aromatic richness, thanks in part to the use of wood ageing. This is a very interesting label for those who love to discover the excellence of small vignerons, who still work with care and artisan passion.
The Extra Brut "Bulles de Comptoir #13 - Cuisine de Dimanche" is a Champagne born from the desire to promote the heritage of a small family domaine. Charles Dufour cultivates 6 hectares of vineyards in the heart of the Aube region, in the municipalities of Landreville, Celles-sur-Ounce and Essoyes. In the countryside, he chose years ago to abandon chemicals, following the principles of organic farming and using only sulphur, copper or biodynamic preparations. At the heart of his labels is excellent Pinot Noir, the true prince of the Côte des Bar, which forms the backbone of the wine, softened by the elegance of Chardonnay and Pinot Blanc. After soft pressing of the grapes, fermentation takes place in oak barriques using only indigenous yeasts. The base wines are then blended and undergo a second fermentation in the bottle, according to the Champenoise method. The 2021 harvest makes up most of cuvée #13, which has 15% young 'reserve', a cuvée of wines from 2010 to 2020, and 5% of the older reserve, a blend of vintages up to 1989.
Cuisine de Dimanche Bulles de Comptoir #13 is a Champagne that perfectly represents its region of origin, characterised by Kimmeridgian limestone-clay marl soils, which are particularly suited to the cultivation of Pinot Noir. The natural approach to winemaking results in a Champagne with a frank and authentic character and an intense, decisive flavour. In the glass, it has a lively straw yellow colour with a subtle and continuous perlage. Ageing in wood gives it rich and mature aromas, with fragrant fruity notes and hints of bread crust. The palate is full and harmonious, pleasant and satisfying, with a fresh and savoury finish of good length. The mature charm of a great Champagne from the Aube region.
