Jerome Blin's Extra Brut Champagne 'La Varoce' is a sparkling wine from the Marne Valley, a central area of Champagne. Jerome is one of the few producers to favour Pinot Meunier, with which he produces very pleasant sparkling wines. The 'La Varoce' presents a graceful and elegant bouquet, with hints of citrus fruits, flowers and typical pastry hints. The sip is smooth and effervescent, with good flavour, freshness and a typical, pleasant bitter sensation on the finish
Champagne 'La Varoce' Extra Brut from artisan producer Jerome Blin is a sparkling wine with a pure and vibrant personality, an expression of the terroir of Vincelles, located in the Vallée de la Marne. Jerome is an authentic winemaker who nurtures a family winemaking tradition dating back as far as 1671, producing genuine Champagnes under the status of Récoltant Manipulant, thus working exclusively with grapes that he personally cultivates. In reality, Jerome does not vinify the entire production of his own plots, but only the grapes of greatest interest, giving what remains to the great Maisons of the region.
'La Varoce' Champagne Extra Brut Jerome Blin consists of a blend of Pinot Meunier (80%) and Chardonnay (20%), varieties grown according to organic farming principles in the village of Vincelles. The vines are around 35 years old and stand on clay-limestone soils characteristic of the Vallée de la Marne, with southern and south-western exposures. Harvesting is done by hand and the grapes are then vinified in white in stainless steel tanks. After a brief soak, also in stainless steel, the sparkling wine base undergoes re-fermentation in the bottle according to the Champenoise Method, with 33 months of ageing sur lie. Finally, following degorgement, the Champagne is dosed Extra-Brut.
To the eye, Champagne Extra Brut Jerome Blin 'La Varoce' shows a straw-yellow hue with a fine perlage and good persistence. The aromatic bouquet expresses scents of apple, wisteria, almond, white flowers, lemon peel and biscuit. The taste, on the other hand, is characterised by anenergetic fresh-savoury verve that accompanies a pleasantly lively progression, with a medium structure and a pleasant, long bitter persistence.
