The Champagne Extra Brut Grand Cru Millesime Mailly is a prestigious Method Champenoise that impresses with its refined and profound style. Mailly represents the smallest and most esteemed cooperative winery in all of Champagne, renowned for the exceptionally high quality of its sparkling wines. The contributing members all work Grand Cru vineyards in the village of Mailly, located in the Montagne de Reims area, the homeland of Pinot Noir. The Extra Brut Millesime is part of the 'Composition Parcellaire' selection, consisting of Champagnes that are born from a blend of grapes from all 35 lieux-dits cultivated by the estate.

The Champagne Grand Cru Extra Brut Millesime from Mailly is a blend of Pinot Noir (75%) and Chardonnay (25%) grapes grown in the Grand Cru village of Mailly on soils composed of a chalky subsoil. Following manual harvesting, the grapes are gently whole-cluster pressed, with the resulting must undergoing alcoholic and malolactic fermentation at low temperature between stainless steel tanks and wooden barrels. After a few months, the base wine is then bottled with the addition of liqueur de tirage for bottle fermentation according to the Method Champenoise. Aging on the lees lasts for several years and takes place in fascinating underground cellars carved into the chalk. After this period, disgorgement and subsequent Extra Brut dosage take place, with a residual sugar content between 2 and 3 g/l.

The Champagne Mailly Millesime Grand Cru Extra Brut has a brilliant straw yellow color with golden reflections and an elegant perlage. The aromatic bouquet reveals aromas of white flesh fruit, citrus, and subtle hints of spices and bread crust. The palate, rich and full, highlights great depth and freshness, as well as a persistent finish characterized by a light minerality.
