Clandestin's Champagne Brut Nature 'Les Semblables - Boréal' is a Blanc de Noirs aged for 24 months on lees, vinified naturally with indigenous yeasts, without clarification or dosage. The result is a champagne with a taut and vertical sip, very fresh and mineral, surrounded by a savory note that prolongs its persistence on the palate, tickled by a fine and constant perlage. An elegant sparkling wine with great personality!
Clandestin's Champagne Brut Nature 'Les Semblables - Boréal' is an artisanal bubbly with an emotional tension elaborated in the Côte des Bar. The Clandestin production company was born as a joint venture between Bertrand Gautherot, the historic founder of the Champagne estate Vouette et Sorbeé, and Benoit Doussot, a young vigneron from Burgundy. The aim of the two is to enhance the Côte des Bar area, which for a long time has been overshadowed by the other more noble areas of Champagne. In addition, Bertrand and Benoit have chosen to focus on old plots located near the small village of Buxières-sur-Arce, long considered less suited due to the cooler temperatures and western exposure of the vineyards. This is the basis for the extraordinary verticality and agility of Clandestin's Champagnes.
'Les Semblables - Boréal' Clandestin Champagne Brut Nature is a pure Pinot Noir, hence a Blanc de Noirs, from organically farmed vines on limestone Kimmeridgian soils with a western exposure. The grapes are vinified white through gentle pressing, followed by spontaneous alcoholic fermentation of the must in French oak barrels, where the liquid rests for several months on the fine lees. Once ready, the sparkling wine base is placed in the bottle and the liqueur de tirage is added for frothing in accordance with the Champenoise Method, with at least 24 months of resting sur lie before non-dosing.
