Nevio Scala's 'Diletto #3' is a spontaneously fermented wine made from native white grapes. It is a wine of great pleasantness, hence the name, but 'cubed': fermentation takes place in cement, steel in contact with the skins and acacia vats, a triple technique that gives character to this drinkable white wine. It expresses intense hints of ripe apple, with citrus nuances and pleasant herbaceous hints. On the palate it is refreshing, with great flavour and an intense, aromatic finish. Nevio Scala's 'Dilètto #3' is an artisanal white wine with a fresh and lively style, the result of a production process based on the use of three different wine containers. In fact, the number 3 that accompanies the name 'Diletto' refers precisely to the trio of materials used, represented in this case by cement, steel and acacia wood. Located in the municipality of Lozzo Atestino, in the province of Padua, the Nevio Scala winery cultivates some of the most important varieties in the Veneto region, including Garganega, one of the most interesting white grapes on the Italian wine scene.
Nevio Scala 'Dilètto #3' is produced using only white grapes cultivated according to organic farming principles on volcanic soils at an altitude of 320 metres above sea level. The harvest is carried out entirely by hand in September with careful selection directly in the vineyard, followed by vinification with spontaneous alcoholic fermentation of the must in three different types of wine containers: cement vats, acacia wood barrels and stainless steel tanks. In the latter container the mass is also subjected to 3 days of maceration on the skins. Invasive clarification or filtration operations are then excluded throughout the entire process.
In the glass, Nevio Scala's 'Dilètto #3' from the Nevio Scala organic winery displays a beautiful, luminous straw-yellow colour with golden hues. On the nose, intense aromas of yellow apple are accompanied by notes of lemon peel and light hints of oregano, all framed by seductive floral and mineral hints. Very fresh and lively taste development, characterised by a persistent sapid-mineral trail guiding the finish. This white wine is endowed with excellent versatility at the table, a worthy companion for various types of dishes, both sea and land.
