Annesanti's 'Sibillino' Pecorino could be compared to a simple person, full of the desire to express himself and with a decisive character. This wine is 'the mirror of the soul' of Francesco Annesanti, a phrase he likes to use to define his work. A young man who has decided to continue what his grandfather had already started, from the very vineyard that has been bearing the best fruit for fifty years. Annesanti was born in 2014, from the stable inherited from his grandfather, renovated and used as a cellar. Here you can breathe in the history of a family, closing your eyes you can hear the scents and sounds of the animals that once animated the farmstead.

Annesanti's Pecorino 'Sibillino' is the quintessence of this vine: it fully represents the characteristics for which it stands out on the wine scene. A white grape variety from central Italy that finds its highest expression in this area of Umbria. Lively, aromatic and with good freshness, accompanied by a distinctive character and good depth. Sibillino is processed in purity, respecting the natural rhythm of mother nature. Spontaneous fermentation with indigenous yeasts, maceration on the skins and the absence of sulphur dioxide make it an extremely intriguing wine.

Annesanti produces a brave Pecorino. The 'Sibillino' is an easy-drinking wine, but one that conceals good complexity. The maceration gives it an intense colour, an extremely bright golden yellow. On the nose, the complexity is confirmed by the citrus notes, reminiscent of fresh summer drinks, the not too intrusive herbaceous hints and the delicacy of spring flowers. In the mouth, the freshness provided by the slight acidity and good flavour dances with the deeper notes. The perfect balance between colour, aromas and taste brings back a harmonious melody.
