The Ribolla Gialla of Borgo Conventi is produced near Gorizia in Friuli Venezia Giulia, in the charming area of Farra d'Isonzo. The winery was founded in 1975 with the aim of producing wines of excellent and rare quality, a goal renewed in 2001 by the Folonari family, who gave production a new impetus, fully respecting tradition and the ecosystem surrounding the vineyards.
The Ribolla Gialla vineyards of Borgo Conventi grow on alluvial soils near the River Isonzo, composed of clay and pronounced skeletal sediments. The climate is characterised by mild winters and hot summers, with the Alps acting as a shield against the cold northerly winds. The average age of the vines is between 10 and 18 years. The grapes are harvested by hand and pressed in the cellar, avoiding maceration on the skins. Fermentation is spontaneous, thanks to the action of indigenous yeasts in the steel. The wine rests in the steel for 10 days.
The colour of Ribolla Gialla di Borgo Conventi is straw yellow. The aromas are delicate, reminiscent of white flowers and honeysuckle, with tropical notes on the finish. On the palate, it is fine, delicate and mineral, with a finish reminiscent of brackish water and lingering flavours that seduce glass after glass. An excellent accompaniment to grilled fish, sushi and sashimi and starters with seasonal vegetables, it also goes well with stewed white meats. An interesting product, suitable for evenings out with old friends by the sea, savouring all the potential of Friulian soil.
