The Sauvignon Blanc of Hochklaus is the creation of a young South Tyrolean winery. The winery works vineyards on a steep slope, a factor that guarantees excellent sun exposure and optimal ripening of the fruit. Vinified with indigenous yeasts, it spends 18 months in tonneaux on the lees, choices that give a complex profile to the final wine. The nose is citrusy and herbaceous, with a marked mineral profile. On the palate, it is fresh and savoury, with a great persistence and fragrance. Try it with savoury fish dishes or asparagus risotto
