Lo Champagne Cuvée 747 Extra Brut rappresenta la perfetta introduzione al mondo Jacquesson, un mondo fatto di ampiezza, classe e complessità. La linea delle cuvée ‘7xx’ ebbe inizio nel 2000 con la numero ‘728’, numerata in conseguenza a tutte le cuvée prodotte da Jacquesson a partire dalla prima registrata: la numero 1, realizzata dalla cantina nel lontano 1898 per celebrare il suo primo secolo di vita. In generale, seppur si tratti di un sans année, questa linea intende celebrare l’essenza di ogni singolo millesimo che di anno in anno rappresenta la base della cuvée, solitamente combinata con una percentuale di circa il 30% di vin de reserve.

Cuvée 747 Jacquesson Champagne Extra Brut comes from a blend of Pinot Noir, Pinot Meunier and Chardonnay. Specifically, Pinot Noir and Pinot Meunier come from the villages of Ay, Dizy, Hautvillers and Champillon and make up 75% of the blend, with the remaining 25% completed by Chardonnay Grand Cru from Avize and Oiry. The vines are cultivated using a highly sustainable agronomic approach while in the cellar, vinification takes place in wooden barrels of various sizes, with maturation on fine lees. The vintage wine is then combined with approximately 30% vin de reserve from the two preceding vintages, before maturing in the bottle according to the Champenoise Method. Maturation on the lees lasts for about 3-4 years and the sparkling wine is finally dosed as Extra Brut. Filtration and clarification are then excluded during the entire process.

Jacquesson's Champagne Extra Brut Cuvée 747 is a brilliant golden yellow colour with a very fine and lively perlage. The aromas evoke notes of candied citrus and dried fruit that meet mineral tones of granite and chalk. The palate reveals an excellent balance between softness, freshness and savouriness, all supported by important body and structure. It closes with a long persistence on sweet and mineral accents.
