The Zibibbo 'Isola del Vento' by Abbazia San Giorgio is an intriguing wine from Pantelleria, made from aromatic white grapes macerated very long and aged in amphora. The winery is strongly linked to the artisanal movement and is a firm believer in spontaneous fermentation, and this wine is no exception. Long maceration and aging allow the development of evolved aromas such as dried yellow fruit, almonds but also salty flavors. The palate has a slight tannicity that gives structure to materiality from the first sip, persistent and savory. It has a gastronomic vocation, to be tried with aged cheeses or shellfish 

Zibibbo 'Isola del Vento' from the Sicilian reality Abbazia San Giorgio is an orange wine from the island of Pantelleria that stands out for its deep and aromatic character, the child of the attributes of the grape variety and the territory and the peculiar process of processing, based on prolonged maceration on the skins and a long aging in amphora. The name of this label pays tribute to one of the elements that distinguishes the island of Pantelleria: the wind. In fact, Pantelleria's territory is traversed by constant and intense sea breezes, which imposed the adoption of the Pantellerian alberello (small tree) cultivation system already in ancient times. This form of farming consists of a very low sapling placed inside a hollow dug in the ground, which allows the plant to be protected from strong winds.

Abbazia San Giorgio's Zibibbo 'Isola del Vento' comes from only Zibibbo grapes, synonymous for Moscato di Alessandria, cultivated with Pantelleria sapling on the volcanic soils of the island of Pantelleria, at an altitude of about 300 meters above sea level. Agronomic management is based on organic farming principles, supplemented by biodynamic practices. After harvesting, carried out strictly by hand, the grapes are vinified with spontaneous alcoholic fermentation accompanied by about 60 days of maceration on the skins. The aging phase begins in stainless steel tanks, where the wine rests for 12 months, and then continues for 24 months in 500-liter terracotta amphorae. Along the entire production process, the use of any additives and oenological aids, including sulfites, is then excluded, as is the use of filtration operations.

Abbazia San Giorgio's 'Isola del Vento' Zibibbo macerated white wine has a lively and intense orange color. Aromatic hints of dried apricot, tangerine, macerated flowers and fig emerge from the glass, combined with hints of almond and hints of iodine. Structured, dry and clean palate, marked by a deep development that shows great savoriness and persistent aromatic fragrance.
