BIANCO SECCO QUINTARELLI 2021 DESCRIPTION

Quintarelli demonstrates through the Bianco Secco that its savoir-faire is definitely rooted in the terroir, not just in the blackberry part of the vineyard, of which it is now a shining flag in the world. A white of character and power, with gifts of fine balance.

The Quintarelli winery makes its Bianco Secco by vinifying a blend of white grapes, including typical local varieties and refined internationals. Garganega, which definitely marks the profile of a 70 percent presence, is mixed with Trebbiano and the extremely local Saorin, accompanied by some presence of Chardonnay and Sauvignon Blanc. The vineyards extend in the Valpolicella area, around the winery headquarters, on the eastern side of the Negrar valley, just north of Verona and the course of the Adige: they are located about 250 meters above sea level on the first offshoots of the slopes that rise to meet the Dolomites, along the Veneto side of Lake Garda. The layouts all offer westward exposure and enjoy soils of essentially calcareous and basaltic composition. The agronomic approach is based on a natural philosophy that rejects the use of synthetic products and imposes manual processing, with yields of around 80 quintals per hectare. Immediately after harvest, the grapes are crushed and left to macerate on the skins for about 12 hours at a low temperature: spontaneous fermentation takes place in thermoregulated steel tanks. Maturation on the fine lees continues for several months in steel, with periodic manual batonnage.

Quintarelli's Bianco Secco has an intense straw yellow colour, enlivened by golden reflections. The impact on the nose expresses a complex aromaticity, characterized above all by ripe fruity notes of yellow flesh, within a sunny frame with mineral references. The sip proposes an elegant density: rich, soft and with aromatic hints, it reveals itself balanced by a lively freshness and a persistent saline nuance. A white that makes structure a worthy companion to important plateaus of shellfish and shellfish or to more traditional mushroom dishes.
