La Chablisienne's Chablis Premier Cru "Fourchaume" was born in the heart of lush Burgundy. The winery is the fruit of synergistic and cooperative work:its history began in 1923 when a group of winemakers led by Abbé Balitrand decided to join forces to cope with the economic difficulties of the period. Until the 1950s, the members' grapes were delivered to La Chablisienne, which was responsible for transforming the raw material and bringing to life the final product to be put on the market. As time went on, the production style changed, and from that time, the harvest was delivered in the form of unfermented juice, thus creating a unique and inimitable style of production; the indispensable interaction between the winemakers also completes the picture. Today the winery aims to continue to improve in all the different stages leading to the final bottle.

The Chablis Premier Cru "Fourchaume" vineyards of La Chablisienne are among the oldest in France. Sediments in the soil of large quantities of exogyra virgula, or fossilized oysters, give the unique and special character found in the wines. Also important is the presence of the Serein River, which contributes to the presence of minerals and nutrients in the soil, which is useful for the lush growth of the plants; perfect southern exposure of the vineyards ensures constant sunlight presence between the rows. Grapes are harvested by hand; in the cellar, the must is cold decanted before alcoholic and malolactic fermentation in steel and barrels. It is aged 12 months in wood.

The colour of La Chablisienne's Chablis Premier Cru "Fourchaume" is a golden yellow with bright, intense highlights. The aromas are those of ripe yellow-fleshed fruit, buttery notes and minerals balancing everything; on the palate, it is delicate, enveloping and sinuous thanks to pleasant hints of vanilla and caramel, in union with a long mineral finish that recalls goblet after goblet. In pairing, it is recommended with light but succulent aperitif appetizers, ravioli stuffed with ricotta and spinach, and asparagus risotto; also perfect for spoon desserts such as crème brûlée and tarte tatin. Great for accompanying formal lunches to celebrate important milestones with colleagues or romantic dinners by candlelight, enjoying the genuine and authentic flavours of Chardonnay in Burgundy.
