The 'Pelèr' Red from the Lombard producer Saottini stands out for its ability to combine the typicality of Garda wines with the character of international grapes, giving rise to a pleasant and well-assorted blend. The blend at the base of this label includes the combination of Rebo, a genetic hybrid created around 1920 in Trentino from the crossing of Merlot and Teroldego, with the international grape varieties Cabernet Sauvignon and Merlot, two of the most widely grown grapes in the world. All combined with the Mediterranean-influenced climate that characterizes Lake Garda, capable of promoting the optimal ripening of the berries.
Saottini's 'Pelèr' Red consists of a blend of Rebo (80%), Cabernet Sauvignon (10%), and Merlot (10%) grapes, handpicked in crates once the berries have reached optimal ripeness. In the cellar, the clusters undergo destemming with minimal crushing, followed by alcoholic fermentation of the must carried out by selected yeasts and accompanied by a long maceration on the skins. For the aging phase, which lasts for about 12 months, cement containers are used, and only after further bottle aging is the wine finally ready for release on the market.
The 'Pelèr' Red from Saottini has a very intense ruby red color, expressing perceptions of ripe red fruit and hints of sweet spices and tobacco on the nose. Despite the richness and intensity of the taste, it shows excellent balance on the palate, with a full-bodied texture accompanied by pleasant freshness and velvety tannins, components that define a pleasantly persistent finish. The 'Pelèr' can be successfully paired with grilled meats, especially lamb, or with cured meats and aged cheeses.
