Monte dall'Ora's Valpolicella Ripasso "Saustò" is one of the absolute cornerstones of the type, explanatory of the style of an outstanding producer. Valpolicella is undoubtedly an area that has enjoyed inordinate media attention, both domestically and abroad, represented mainly by its flagship wine, namely Amarone. As is often the case, in conjunction with celebrity and market demand, one can run the risk of coming across products that are distorted and aimed purely at the commercial angle, which is why knowledge of the producers and their work ethic becomes necessary. About Carlo Venturini of Monte dall'Ora, there would be so much to say, but perhaps it is simpler to describe him as one of the artisanal faces of Valpolicella, able to give us back his territory in liquid form for more than 20 years, in a sincere and exciting way. Each bottle is a little gem.

"Saustò" Valpolicella Ripasso is made from typical local red grapes, namely Corvina, Corvinone, Croatina and Oseleta. In the vineyard, the use of any chemical or synthetic substances is banned, and there is a focus on biodiversity, so much so that other crops are alternated with the rows in order to recreate a perfect balance. In the cellar, we proceed with spontaneous alcoholic fermentation, in this case, in contact with the marc of Recioto for 10 days. The liquid ages for 3 months in oak barrels and 10 in bottles.

Ripasso della Valpolicella "Saustò" presents itself in bright ruby guise. The nose is perfectly balanced between finesse and intensity, a mix of ripe plum, violets, black pepper and infused spices that is never cloying or static. The dynamism of the liquid also characterizes the sip, where the wine is enveloping and full while preserving drinkability, thanks in part to the contribution of freshness and delicate tannic friction. Great red, which tells a piece of local history.
