JIASIK BIANCO BORGO SAN DANIELE 2022 DESCRIPTION

Borgo San Daniele's Jiasik Bianco was born near Cormos in the province of Gorizia, a border area between our peninsula and Slovenian territory. The winery is managed by siblings Mauro and Alessandra Mauri, who work the land and its fruit every day with extreme responsibility, trying to have as little impact on the environment as possible. For this reason, they work in harmony with nature, limiting the number of bottles and trying to distribute the vineyards on small plots of land, in order to enhance their most intrinsic characteristics. Today, the winery slavishly follows the dictates of organic and biodynamic agriculture, with a view to a better future and sustainable vineyard work.

The Malvasia and Riesling grapes of Borgo San Daniele's Jiasik Bianco grow in Giassico, a small village with an atmosphere reminiscent of the Austro-Hungarian Empire. In the vineyard, copper, sulphur and infusions of equisetum, dandelion and nettle are used, all of which guarantee optimal results in making the vegetation lush and flourishing. The climate is continental with cold winters, often interesting with snow phenomena, and cool, sunny summers; significant temperature swings between day and night that give the grapes an interesting sensory profile. The grapes are harvested by hand; in the cellar, the whole bunches are crushed for 3-4 hours. This is followed by soft pressing and alcoholic fermentation with indigenous yeasts. Staying on the yeasts with weekly batonage.

To the eye, Jiasik Bianco di Borgo San Daniele appears straw yellow with brilliant reflections. The nose perceives hints of white summer flowers, fresh fruit. Ripe white flesh and the typical mineral note on the finish; on the palate it is soft, inviting and enveloping with great aromatic strength from the Riesling and Malvasia. Perfect with smoked salmon and first courses with seafood; also interesting with roast white meats and seasonal vegetables. Suitable for lunches in the company of lifelong friends, enjoying rare flavours that reveal the potential of an extraordinary borderland.
