'Clairet' Ottin 2020
Ottin's "Clairet" is a wine made mainly from Nebbiolo grapes and Neiret, a historic blend from the Aosta Valley that this winery has brought back to life. It takes its name from the historic 'chiaretto', whose characteristics it also embodies: finesse, gracefulness and light colour. Elegant hints of undergrowth, sweet spices and fruit jam meet intriguing balsamic notes. On the palate, it is tannic but silky, with a dynamic and persistent finish. A different way of interpreting a noble grape variety
The “Clairet” Ottin presents itself as a fascinating journey into the winemaking tradition of Valle d'Aosta. This wine, a historic blend made predominantly from Nebbiolo grapes and Neiret, revives ancient flavors and revisits the original “chiaretto,” celebrating the finesse, lightness, and delicate color that define its essence. Cantina Ottin stands out for its commitment to enhancing the local territory and its unique characteristics, transforming wine into an authentic expression of the mountain landscape. The name “Clairet” evokes a forgotten era and brings a centuries-old tradition back to life, offering consumers a timeless experience.
Located between the municipalities of Quart and Saint-Cristophe, at an altitude of 650 meters above sea level, the winery that produces this “Clairet” Ottin stands on challenging terrain characterized by steep slopes, a very high stone content, and morainic, sandy soils. Cultivation techniques prioritize sustainability and environmental respect, with particular attention to organic farming. Harvesting is carried out manually, followed by a 15-day drying period in a controlled cell, which gives the wine remarkable depth and complexity. A short cold maceration precedes alcoholic fermentation, which lasts about 10 days, before the wine moves on to maturation for 24 months in French oak tonneaux, where it evolves and develops rich aromas and flavors. As a final step, the wine rests for an additional 12 months in bottle.
“Clairet” Ottin is a symphony of aromas and flavors that delights the senses and captivates discerning palates. Its vibrant ruby-red color with garnet reflections introduces a complex and enveloping bouquet. Floral notes of violet and rose blend harmoniously with balsamic and minty hints, creating a dynamic and intriguing aromatic profile. On the palate, the wine stands out for its elegant tannins and long, vibrant finish, leaving a sensation of energy and vitality. This “Clairet” pairs beautifully with refined and creative dishes, including traditional cuisine from the Aosta Valley, ensuring a celebratory moment to share with friends and family.
