Zýmē winery arises in an ancient quarry sandstone dating back to 1400 AD, in San Pietro in Carlano, in the heart of Valpolicella, where this winemaking area's culture was born. After having spent his childhood in his parents’ vineyards and having gained experience in the art of winemaking with his future father-in-law Giuseppe Quintarelli, the visionary owner and winemaker, Celestino Gaspari has developed a philosophy, an ethic, a culture based on sustainability during production and excellence of the result. The collection Zýmē includes not only great classics, as Valpolicella, Amarone, but also amazing inventions, as Kairos, From Black to White, all creations that strike those who taste them from the very first sip: in these artistic bottles there is the author’s humble and capable intent to express them as perfect interpretation of a territory, a population, ancient traditions and craftsmanship "that - citing Celestino - have made Valpolicella great".

Zýmē is not a project, but a constant evolution, as shown by the choice of the name: the Greek word Zýmē means the ingredient itself of metamorphosis, the yeast. Immersed in the rock, the winery rises on three levels, designed by the architect Moreno Zurlo in perfect balance with the idea of sustainability of the winemaker: while in the silent depths of the cellar flows a river with meteoric water in the ground, at top of the roof solar panels catch solar energy.

The territorial identity and the pure love of nature are the principles from which ambitious choices have been made, such as the revaluation of the ancient native grapes grown in nine acres of vineyards. Looking down from the cellar you can see the pentagonal shaped vine leaf, symbol of the meeting between history and nature, and icon of Zýmē... every tip corresponds to one of the five main elements in wine production: man, vine, earth, sun and water.
