In the vastness of Japanese traditions and gastronomic excellence, Tatenokawa's Sake Junmai Daiginjo 'Phoenix' stands out, a product that encompasses centuries of craftsmanship and unique contemporary inspiration. Its label, a rainbow of colours and flavours, is a tribute to the passion for music and Nihonshu (the Japanese term for sake), embodying the encounter between tradition and innovation. Indeed, the French rock band "Phoenix" collaborated with Tatenokawa in 2017 to launch this "rice wine", in honour of Toshiro Kuroda, a historian who dedicated his entire life to the culture of sake and Washoku (Japanese cuisine). This inspired the Band's passion for sake: "Mr. Kuroda was a great teacher who taught us all the beauties of life, including Sake, and continues to inspire us every day". 

Hailing from a region rich in history and culinary art, Tatenokawa's Sake Junmai Daiginjo 'Phoenix' originates in the Shonai region, under the shadow of Mount Chokai, where the purity of the water has captured the attention of generations of brewers. This Sakagura (in Japanese, the cellar where the sake is brewed), founded back in 1832, was advised to brew Sake by none other than the head of the Uesugi clan, and has remained faithful to its tradition to this day. Thanks to the careful selection of its brewmaster Toji, Tatenokawa produces 'Phoenix' from Dewasansan, a type of rice carefully cultivated in the Shonai region, guaranteeing high quality in every bottle;

Tatenokawa's Sake Junmai Daiginjo 'Phoenix' stands out for its elegance and balance. The Dewasansan rice gives it a fine and fragrant bouquet. On the nose, fruity notes of melon and pear open up, anticipating a round and silky body that develops in the mouth with a clean and persistent finish. Perfect to enjoy with traditional Japanese dishes such as sushi and grilled fish, this Sake succeeds in enhancing the flavours and providing an experience to remember. Hats off to Tatenokawa who decided to donate a portion of the sales of 'Phoenix' to the Japanese Red Cross to support the advancement of medical technology in the field of cancer testing, following the death of Toshiro Kuroda from this disease.
