The Raspato from the Umbrian Annesanti winery represents a drinkable and sincere sparkling white wine. Nestled in the hills of Terni, within the municipality of Arrone, this small artisanal winery has had the merit of contributing to the viticultural enhancement of the Valnerina, combining fundamental values such as spontaneity, tradition and experimental research. The objective of Francesco Annesanti, a young and promising winemaker at the helm of the cellar, is to offer genuine wines that speak the language of terroir. There are numerous labels on offer, all intimately linked to the terroir, making up a total production of no more than 20,000 bottles per year.
Annesanti Bianco Raspato is made from white grapes from vine clones that were recovered from the grandfather's vineyard and then reproduced by mass selection. The iter production involves white vinification without skin contact and without the addition of sulphites, using only indigenous yeasts. Re-fermentation takes place in the bottle thanks to the use of fresh frozen must, whose naturally present sugars are transformed by the yeasts to produce froth.
To the eye, Annesanti's Raspato sparkling white wine expresses a slightly cloudy straw yellow colour, with a lively, fine effervescence. The nose evokes hints of white-fleshed fruit and floral fragrances, which combine with yeasty and bakery sensations. Taste fresh, lively and vivacious, remarkably drinkable and graceful. An immediate and accessible expression, never tiring, designed for everyday consumption. Ideal as a light-hearted aperitif in company with various appetisers or fresh cheeses.
