PROSECCO TREVISO 'SETTOLO' EXTRA DRY COLLAVO DESCRIPTION

Prosecco Treviso Extra Dry 'Settolo' from the Fratelli Collavo sparkling wine company constitutes a fun, straightforward bubbly perfect for lending liveliness to convivial moments. It is a distinctive blend of Glera, Prosecco's symbolic grape variety, Bianchetta Trevigiana and Perera, the latter two varieties present in small percentages. As can be guessed from the name, Bianchetta Trevigiana is historically linked to the province of Treviso, used in cooler vintages to mellow Prosecco thanks to its softness of flavour. As for Perera, this grape has been cultivated for centuries in the Valdobbiadene and Treviso areas, although it was in danger of disappearing in the 1970s because of its remarkable susceptibility to flavescent dorée.

Fratelli Collavo Prosecco Treviso Extra Dry 'Settolo' comes from a solid base of Glera, to which 10% Bianchetta Trevigiana and Perera is added. The vines are grown according to organic farming principles on mixed-textured, clay-limestone soils. The clusters are harvested by hand and then soft-pressed, with subsequent alcoholic fermentation taking place in temperature-controlled stainless steel tanks. After filtration, the mass is placed in autoclaves for second fermentation according to the Charmat or Martinotti Method, where the liquid rests for a month before bottling under isobaric conditions.

The Treviso Extra Dry 'Settolo' Prosecco Fratelli Collavo is pale straw yellow in colour with refined effervescence. The nose shows typical fruity and floral varietal notes of pear, green apple and wildflowers, while the sip is fresh, pleasant and drinkable, with a pleasant mineral persistence.
