ROSSO FRIZZANTE ANCESTRALE CANTINA GIARDINO DESCRIPTION

The Rosso Frizzante Ancestrale is a bottle with a funky personality produced by the artisanal winery Cantina Giardino. In the late 1990s, oenologist Antonio Di Gruttola began experimenting with spontaneous, minimalist vinification, assisted by a group of friends and family. From what started out almost as a game between enthusiasts, Cantina Giardino was officially born in 2003. It began its activity with the black grape variety of Irpinia par excellence: Aglianico. Today, the estate offers this variety in very different versions in terms of type and style.

Cantina Giardino Rosso Ancestrale Frizzante is made exclusively from red grapes from old vines grown organically on sandy and clayey soil. Manual harvesting is followed by spontaneous alcoholic fermentation in steel vats using only the yeasts present on the grapes and in the cellar environment, accompanied by fairly brief contact of the must with the skins. Subsequently, the wine is placed in the bottle, and frozen free-run juice is added to achieve frothing in the glass according to the Ancestral Method. The mass is not subjected to any clarification or filtration during the entire process.

The Metodo Ancestrale Cantina Giardino Rosso Frizzante expresses a ruby red colour with a slight effervescence in the glass. The aromatic range opens on descriptors of red fruits and herbs, such as rosemary and tarragon, interspersed with pleasant floral and mineral hints. Savoury, lively and balanced on the palate, the fine mousse enhances the lively freshness. With its funky, drinkable spirit, this sparkling red wine is a tasty accompaniment to assorted charcuterie boards.
