The Sparkling Brut Metodo Classico "Calce" from San Marzano is made from Chardonnay grapes, planted decades ago on vocated soils of clay nature that demonstrate the great versatility of the region, able to give great expressions of many oenological styles. White flowers such as broom, notes of pineapple and orange emerge from the glass, as well as yeast and pastry aromas typical of Metodo Classico. In the mouth, it has almost Mediterranean characters, with a great freshness and a great flavor, while the light and persistent bubble generates both pungency and lightness
San Marzano's Spumante Brut Metodo Classico 'Calce' is the result of synergic and careful work by a cooperative of winegrowers who, over time, have always set themselves the goal of producing quality wine, enhancing the characteristics of the land and the raw material. In 1962, they began to give prestige to Primitivo di Manduria, making it interesting even before it became world-famous. In 1996, the first bottles started to be put on the market, going from a small production to an internationally recognised brand. Today, after more than sixty years, San Marzano continues to produce wines with a distinct personality and excellent quality.
The pure Chardonnay grapes of San Marzano's Spumante Brut Metodo Classico "Calce" grow in a Mediterranean climate with hot, sunny and often dry summers and mild winters thanks to the influence of sea breezes. The soil is mainly composed of skeleton and clay, shallow and medium-textured; the rows are exposed to the south, for fully ripe grapes at harvest time. The latter is carried out manually around the first week of August; in the cellar, the bunches are softly pressed, using only the first fraction of free-run must, which is then fermented. It re-ferments in the bottle according to the dictates of the Metodo Classico and matures 36 months on the lees.
The colour of San Marzano's Spumante Brut Metodo Classico "Calce" is an intense straw yellow with brilliant golden reflections and a fine, persistent perlage. The bouquet of aromas is reminiscent of broom flowers, ripe exotic fruit and candied citrus fruits, together with the classic hint of freshly baked bread crust; in the mouth it is pungent, drinkable and balanced with an important final freshness that recalls cup after cup. In pairing it is recommended with first courses dressed with shellfish and molluscs, light canapés with smoked fish and delicate sauces; also interesting with vegetarian dishes and fresh cow's milk cheeses. Perfect for a toast with the family on anniversaries to enjoy the goodness of the Apulian land, declined in a sublime manner.
