GRAPPA DI AMARONE ALLEGRINI - 50CL DESCRIPTION

Grappa di Amarone is obtained from the pomace of a great Italian wine, preserving its peculiarities of extreme richness and persuasiveness. A winery that has become a reference point for quality and production style that of the Allegrini, a true bulwark of Valpolicella, and consequently one of the greatest exponents of Italian wine in the world. The winery, which today has more than 100 hectares of property, has as its basic principle the valorisation of local grape varieties such as Corvina, Rondinella, Molinara and Oseleta cultivated in enchanting amphitheatres among which the cru of La Poja and La Grola stand out for their importance and beauty. The intention, now realised, is to turn towards sustainable agriculture where no chemical or synthetic products are used in the vineyard, and to continue in the same way in the cellar, with fermentation using indigenous yeasts.

Allegrini Grappa is produced from the marc of Corvina, Rondinella and Molinara grapes used in the vinification of Amarone, the winery's flagship wine. The procedure used for the production of this nectar is extremely simple, and involves the pressing of the marc, which takes place immediately after racking, and distillation in continuous and discontinuous cycle copper stills. What makes the difference is the ageing process, as the liquid is left to stand for around 12 months in oak casks, which increases its smoothness and complexity.

Grappa di Amarone immediately captivates by virtue of its amber colour, with mahogany highlights depending on ageing. The olfactory picture is immediately a triumph of warm and welcoming sensations, where the ripeness of the cherry, the intensity of dark chocolate and the persuasiveness of sultanas, also due to the drying of the base pomace, chase each other in succession. The taste draws a liquid that seems to be made of fabric, its velvety tactility a pure joy for the palate. Rich and persistent, we recommend pairing this nectar with a dark chocolate of good intensity.
