Azinda Agricola Naturale's Bitter is the first natural bitter made from certified organic grapes vinified using artisanal methods. It is born in Southeastern Sicily from the combination of Frappato di Vittoria and Nero d'Avola, fermented with indigenous yeasts, along with botanicals harvested in the Iblei Mountains countryside, alcohol and sugar. The Azienda Agricola Naturale presents its Bitter, the first of its kind to be produced using sustainable, non-invasive methods with only organic ingredients. This production reality was born from the collaboration between Simone Sabaini, founder of the Modica chocolate shop Sabadì, and Giusto Occhipinti, founding partner of the COS wine estate. The approach adopted is distinctly artisanal and, regardless of the label in question, everything starts with organic grapes vinified through spontaneous fermentation. In addition, the flavouring process makes use of botanicals grown according to organic farming principles.
In particular, Bitter Naturale is made from Cerasuolo di Vittoria wine produced with organic grapes from the Frappato and Nero d'Avola vines. The vines are grown on calcareous and siliceous soils, characterised by the presence of clay and tuff. Alcoholic fermentation occurs spontaneously thanks to the sole intervention of indigenous yeasts and during the skin maceration phase, periodic manual punching-down and pumping-over is carried out in order to extract the noble compounds contained in the skins. Once ready, the wine is aromatised with a blend of organic botanicals and then water and sugar are added.
To the eye, Azienda Agricola Naturale's Bitter shows a brilliant garnet red colour. The nose is a riot of Mediterranean aromas ranging from hints of orange peel and wild herbs, enriched by pleasant spicy nuances. The taste is concentrated and harmonious, endowed with excellent freshness and a characteristic bitter finish. A perfect Sicilian bitter to be served neat as an aperitif or at the end of a meal, but can also be used as an ingredient in imaginative and eccentric cocktails.
