CHAMPAGNE ROSÉ BRUT GRAND CRU AMBONNAY ANDRÉ BEAUFORT DESCRIPTION

André Beaufort Champagne Rosé Brut Grand Cru Ambonnay is a sparkling wine with a generous and sincere soul, an authentic expression 'in pink' of the Pinot Noir of Ambonnay. This winery is one of the promoters of sustainable viticulture, among the first to adopt the principles of organic farming, excluding the use of synthetic chemical substances. It was in fact Jacques Beaufort, André's father, who converted the estate to organic farming back in 1971 because of his allergy to certain synthetic compounds, which were replaced by preparations of plant and animal origin.

André Beaufort's Champagne Rosé Brut Ambonnay Grand Cru is a pure Pinot Noir from vines around 50 years old located in the Grand Cru village of Ambonnay in the Montagne de Reims area. The vines, bred organically and biodynamically, are rooted on limestone soils characterised by an abundant presence of chalk in the subsoil. After harvesting, the grapes are mellowed in steel vats for a brief skin maceration using the "saignée" technique. Alcoholic fermentation takes place spontaneously always in steel, a container in which malolactic fermentation also takes place, and once the sparkling wine base has been made, re-fermentation in the bottle according to the Champenoise Method takes place. Maturation on the lees in glass lasts for at least 72 months, at the end of which the degorgement à la volée and subsequent Brut dosage takes place.

The Rosé Champagne André Beaufort Ambonnay Brut Grand Cru has an intense pink colour tending towards salmon, with a subtle and elegant perlage. Fascinating aromas of red fruits such as strawberry and raspberry combine with floral perceptions of rose, iris and freesia. Deep spicy hints of clove and sandalwood complete the olfactory context, preluding the full and rich sip, characterised by refined minerality and infinite persistence.
